Coffee Cake

Ingredients

    • 6 ozs Soft Margarine
    • 9 ozs Caster Sugar
    • 9 ozs Plain Flour
    • 2 Tablespoons Camp Coffee
    • 5 Eggs
    • 3 Teaspoons Baking Powder
    • Icing            3 ozs Margarine
    • 6 ozs Icing Sugar
    • 1 Dessert Spoon of Coffee
    • 2 Dessert Spoons of Milk

 

Method

Place margarine, sugar, flour, eggs and coffee in mixing bowl and beat for 4 mins.

Fold in baking powder.

Spread in 2 sandwich tins.

 

Oven temperature 180 C

Cooking time 40 – 45 mins.

Cool with top side up to prevent sticking. Cut off top if icing a double sandwich.

Icing

Beat margarine, icing sugar, coffee and milk until creamy. Decorate cake when cool.
