Sweet and sour Chicken
Ingredients
- 4 Tablespoons Vinegar
- 3 ozs Demerara Sugar
- 1 Tablespoon Tomato Puree
- 2 Tablespoons Soy Sauce
- 1/4 pt Pineapple Juice
- 1/2 pt Water
- 1 Tablespoon Cornflour
- (blend with a little of the water)
- 1 Medium Onion, coarsely chopped
- 4-6 ozs Chopped Pineapple
- 3 Chicken Breasts
Batter
- 8 ozs Self Raising Flour
- 1/2 pt Water
- 2 Teasp Vinegar
- Salt
Method
Lightly fry onion.
Add chopped pineapple and blended ingredients.
Bring to the boil, stirring all the time.
Make batter by placing flour in bowl.
Make a well in the centre.
Incorporate the water to make a smooth paste.
Add vinegar and salt.
Cut chicken into cubes. Dip chicken in batter and deep fat fry.
Place battered chicken in dish and pour sauce over it.
