Ingredients
Method
Chop walnuts and grate the carrots.
Place corn oil, caster sugar and eggs in a bowl and beat well.
Add rest of ingredients and mix well.
Pour into 3 x 1 lb loaf tins or 1 x 8” square tin
Cool for 5 mins before removing from tin.
Oven Temperature – 170 C.
Cooking Time - / 1 ½ hrs
Icing
4 ½ ozs Philadelphia Cheese
3 ozs Butter
3 ozs Honey
Beat all the ingredients together and spread over cake. Decorate with chopped walnuts. Refrigerate.
