Method
Crush biscuits.
Melt margarine until it sizzles; add biscuits, coconut, lemon rind and condensed milk.
Place in swiss roll tin.
Icing
Add lemon juice and few drops of colouring to the icing sugar and mix well. Spread over base and sprinkle with coconut (if coconut not very fine then put in food processor). Cut when cold.
