Chicken Leek Bake
- 4 Baking Potatoes
- 3 Chicken fillets
- 1 Leek (sliced)
- 2 Onions (chopped)
- 4 Bacon Rashers
- 2oz Grated Cheese
- 1oz Butter
- 1oz Plain Flour
- 1/2pt Milk
Cover potatoes with kitchen foil and bake in oven.
Cut chicken fillets in pieces and cook (preferably steam). Placed cooked chicken in casserole dish.
Sauté leek and one onion, add flour and gradually add milk. Pour sauce over chicken.
Dice bacon rashers and fry with remaining onion.
Dice baked potatoes leaving skin on. Spread over chicken.
Spread bacon and onion over potato.
Sprinkle cheese on top
Bake in oven.
