Pastry - 6 ozs Plain Flour
4 ozs Margarine
Pinch of Salt, 1 Egg
Filling – 4 ozs Streaky Bacon
1 Small Onion
2 – 3 ozs Cheddar Cheese
Salt and Pepper
½ Pint Milk
Prepare pastry by rubbing margarine into flour and salt.
Add egg yolk, roll out pastry, line 8” flan tin.
Cut bacon into strips, fry lightly until soft, drain on kitchen roll and put on base of pastry case.
Chop onion finely and sauté. Sprinkle over pastry base.
Grate cheese and sprinkle over base. Keep a little for the top.
Beat eggs, add milk, salt and pepper.
Pour into pastry case.
Slice tomatoes, place on top of filling.
Sprinkle remaining cheese on top.
Bake in oven – 180oC
Cooking time – 45 minutes or until filling is set.
