Christmas Pudding

Ingredients

    • 7ozs margarine
    • 14ozs sultanas, 14ozs raisins
    • 1oz chopped almonds
    • 6ozs plain flour
    • 2 heaped teasp mixed spice
    • 1 teasp nutmeg
    • 6ozs fresh breadcrumbs
    • 7ozs soft brown sugar
    • 2 eggs
    • rind and juice of lemon
    • 1 tbsp treacle
    • 4 tbsp milk / beer
    • 2 tbsp brandy (optional)

 

Method

Melt margarine in a saucepan.

Mix all ingredients together in a large mixing bowl.

Place in 2 x 2lb pudding bowls or 4 x 1lb pudding bowls and cover well.

Steam 2lb for 6 hours or 1lb for 4 hours.

Cool, cover and store in a cool place

Pudding can be steamed again before serving, or portion and microwave for 30 secs.
